cacao chia balls
a delicious desert for chocolate lovers.
1 cup chia seeds
3 large spoons pure organic Cacao powder
1 cup walnut
1 large spoon organic coconut oil
stevia powder to taste
pinch of grounded cloves, star aniseed or cinnamon for a milder taste
shredded coconut for dusting
how to;
soak walnuts for about 1 hr, drain.
add 1/2 cup of water to chia seeds. mix and wait till the seeds have swelled up and absorbed all the water. it should look like thick jelly. add more water if necessary.
blend all ingredients together. start with a small amount of stevia first, taste and adjust. stevia tends to give a bitter taste if use the wrong quantity. it’s really trial and error with the dose and it depends on the brand you have. you could substitute stevia with honey if you like.
roll the mixture into balls and dust with shredded coconut or almond meal

I love successful baking :D These things are amazing, and, awesomely, clock in at 68 calories per muffin if you make 12 with the recipe! It’s also a super cheap recipe, which I know everyone appreciates:P I haven’t calculated it, but on a rough estimate, I’d say it costs probably $1.00-1.50 for the recipe, depending on what kind of flour you use and whether or not you add flax seed. If you add the walnuts, it would obviously be more, but I didn’t and I still like them :P
- 1 cup whole flour
- 2 Tablespoons ground flax
- rounded 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup milk substitute
- 2 Tablespoons olive oil (or coconut, vegetable, grapeseed..)
- 2 ripe bananas, mashed
- round 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla
- 1/2 cup of chopped walnuts (optional. can substitute almonds or dried fruit, too)
Preheat oven to 350. Mix together all of the ingredients, but add the baking soda last. Line muffin pans with liners. Then, fill each muffin with batter to the rim. For mini muffins, bake for 20 minutes (makes 20 muffins). For regular muffins, bake for 25 minutes (makes 10 muffins). To make banana bread, double the recipe and bake for 30 minutes.
How I changed it: I used spelt flour and unsweetened coconut milk. I left out the flax seed and walnuts simply because I didn’t have any. If you change any of this, obviously they won’t be 68 calories… but it’ll still be low AND probably even healthier than mine!

Gluten-free, dairy-free, sugar-free energy balls
- 1 cup (gluten-free) oats
- 3/4 cup roasted natural almond butter
- 1/2 cup shredded unsweetened coconut
- 2 tbsp dark chocolate chips (I used sugar-free baking chocolate)
- 1/4 cup of ground flax seed
- 1/8 cup chia seeds
- Sweetener (stevia, agave, honey) - optional
Mix, roll into balls, and chill. No baking required :)
Note: honey would work well in this to make them sweeter and to hold them together better, but I left it out and it worked fine.

Getting my stats out. Week two.
Wow, what a massive difference this past week has made. I’ve eaten healthy and walked everyday for gentle exercise, but these results are amazing to see.
Height:158cm (I haven’t grown)
Weight: 70kg (A lose of 2 kilos - 4lbs 6.5 oz)
BMI 28.0 - Body fat 34.4
Bust: 101cm (Lost 4cm)
Waist: 86cm (Lost 9cm)
Hips: 99cm (Lost 6cm - I can’t believe this or the waist measurement, but I checked twice and it’s right… whoop)
Biceps: 30cm (Lost 2cm)
Thigh: 61cm (Lost 3cm)
This is great, but I don’t expect all my digits to drop like this each week. After this week I am going to up the exercise and try to pump up my heart rate, so I could even level out with muscle which I tend to build easily.
For now I’m really happy that I’m half way through the hard part and I’ve had a couple of cheat meals. Go me !

The Food! Day Eight. What a result!
I was definitely back on the wagon today. Nice clean and healthy food. The best thing about this morning though is while everyone was complaining about how hungry they were at 11am, I was sitting there, working and feeling very content.
I had a bit of a slump this afternoon and felt reaaalllly tired, but remembered I had an apple in the fridge and that fixed me up until dinner.
To today’s menu was…
Water - 2 litres
Latte x 1
Breakfast - 8.30am
Bodyism Super Smoothie. I managed to pick up some flaxseeds on the weekend so had them with some ground nuts and oats in rice milk. Oh and I added some blueberries left over from the weekend so I popped some of them in too.
Snack - 11am
A handful of nuts
Lunch - 1pm
A huge green salad with avocado, spinach, red pepper, cucumber and chicken!
Snack - 3pm
1 apple
Dinner - 7pm
A large omelette with tomato, spinach and a few pieces of sliced chicken.
To finish off I made a large juice again with carrots, pear, ginger, cucumber and a teaspoon of wheatgrass. It was nice and cold and fresh and I’m ready to take my measurements…
